PAT INTO 8X8 PAN. (STICKY-USE PLASTIC WRAP TO SPREAD) BAKE FOR 20-25 MIN.

1 C MEDJOOL DATES (10-15) (PITTED AND CHOPPED)
3 TBS LEMON JUICE
½ TBS LEMON ZEST
2 TBS FLOUR
¼ BAKING POWDER
ADD 1 TBS OF COINTREAU OR WATER TO CHOPPED DATES AND MICROWAVE FOR 30 SEC.
IN THE SAME FOOD PROCESSOR/BLENDER, WHIRL EGGS AND DATES FOR 10 SECONDS. THEN ADD REST OF THE INGREDIENTS AND WHIRL FOR ANOTHER 10 SECONDS.
POUR THE MIXTURE OVER THE BAKED CRUST AND BAKE IT FOR 20-25 MIN AT 350 F.
